As spring rounds the corner and the weather slowly gets warmer, one thing is for sure — SPRING BREAK is coming!
On break, I am always looking for something to do because I get bored. One of my favorite pastimes is baking. Springtime is one of my favorite times to bake because there are so many things that I can do. With fresh fruit in season and the Easter holiday, the possibilities are endless. It doesn’t matter whether you are an expert baker or not; these ideas vary in difficulty, so there is something for everyone. Here are some of my favorite spring baking items to hopefully inspire you!
Fruit Tarts – these delicious sweets are very easy to make and taste great. You can make them with blueberries, lemon, peaches, or any fruit of your choosing.
For the tart shell-
12 tablespoons of unsalted butter
½ teaspoon of vanilla extract
1 ¾ cups all purpose flour
Pinch of salt
Mix the butter and sugar together in the bowl of an electric mixer fitted with a paddle attachment until they are just combined. Add the vanilla. In a medium bowl, sift together the flour and salt, then add them to the butter-and-sugar mixture. Mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk.If you want you can make one big tart or you can use a cookie cutter to cut the dough into smaller shapes and make tartlets. Bake them at 350 degrees without the filling for 20 minutes then remove it from the oven, add the filling and bake it for another 20-25 minutes. Let cool before eating.

Tiered Cakes – these cakes are slightly more difficult but with the proper preparation, they can be done! These cakes take more time than other desserts so set out a good amount of time to make a great cake. Trust me, it’s worth it!

A Strawberry Shortcake – With fresh strawberries, these can be a really nice light dessert. They can also be as easy or as hard as you want. If you chose, you can make your own shortcake and whipped cream but in a time crunch, store bought stuff works just fine.
Ingredients and Instructions:
For the whipped cream-
1 cup heavy whipping cream
2 tablespoons of sugar
Combine sugar and heavy whipping cream in a metal bowl and whisk until stiff peaks form. It is helpful if the bowl and whisk are cold in order to give the whipped cream a better consistency.
For the shortcake-
5 tablespoons of sugar
2 cups of all purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
2 tablespoons sugar
3/4 teaspoon salt
1 1/2 cups heavy cream
Sift together the flour, baking powder, baking soda, remaining 2 tablespoons sugar, and salt in a medium bowl. Add heavy cream and mix until just combined. Place mixture in an ungreased 8-inch square pan and bake until golden, 18 to 20 minutes.
Cupcakes – a classic! Cupcakes are customizable and you can do them to your liking. For Easter, you can make cute designs with frosting and be very creative. They are basically mini cakes so you may use the same recipe but cook them in the oven for anywhere between 12-20 minutes or until the cake tester comes out clean.
